Southern Fried Salmon Patties
There are many different versions of this recipe,
and you can add in what ever ingredients you wish
but this is my Mother's Basic Recipe:
1 can pink salmon: drained, de-boned, and "skin" removed
1 can pink salmon: drained, de-boned, and "skin" removed
Place in a bowl, flake apart with fork;
Add into the bowl with the salmon
2 eggs
2 TBSP flour
{I prefer S.R. so they rise and are nice and fluffy}
but plain can be used
2 TBSP yellow corn meal
1 TBSP milk
Salt and Pepper
Optional:
chopped onions
chopped celery
Mix together well
Heat skillet with 1/4 inch oil
{olive for frying, vege or canola}
Drop by the spoonful into cast iron skillet and
fry on medium high until brown and crispy on both sides.
Note: you don't want to "flip" these in the pan
a lot. Just let brown and both sides and they are done.
Place on a paper napkin to drain the oil.
Serve on a bun as a sandwich with chips,
or with a bowl of Grits, butter and cheese!

DeleteNote: once the salmon is canned the bones do not have to removed, break them up with a folk and keep them in the mixture - the bones are a good source of calcium.
ReplyDeleteWe Alaskans also keep the liquid from the can to make a nice mustard sauce to top off the patties!
Hey Julia! That's interesting about the juice - I'd love to have your recipe, because mustard is usually what I use as a dip. I'll have to try breaking up the bones, at my age, I need all the calcium I can get ;) Thanks so much for coming over to comment!
